Healthy Banana-Nut Muffins
Ingredients
- 1 c all-purpose flour
- 1 c whole wheat flour
- 34 c brown sugar
- 12 c chopped walnuts
- 2 tsp baking powder
- 1 tsp cinnamon
- 12 tsp salt
- 2 medium bananas mashed
- 2 large eggs
- 1 c milk
- 13 c oil
Directions
- Preheat oven to 400 200C
- Mix both flours with sugar and walnuts
- Stir in baking powder cinnamon and salt
- Place mashed bananas in separate bowl
- Add eggs milk and oil and mix well Add wet ingredients to dry mixing just until moistened
- Spoon into lightly greased muffin tins and bake 15 to 20 minutes depending on size
- Cool on wire racks
- Serves 6 to 8
