Healthy Sweet And Sour Chicken

Ingredients

  • 5 to 6 chicken breasts skinned and boned
  • 1 c green onion chopped
  • 2 green peppers 1 inch squares
  • 1 13 c cornstarch
  • 13 c soy sauce
  • 1 tsp ground ginger
  • 12 c plus 1 Tbsp cider vinegar
  • 34 c ketchup
  • 34 c water
  • 34 c sugar
  • 12 Tbsp sesame oil
  • 1 12 Tbsp vegetable oil

Directions

  1. Cut chicken into 1 inch cubes
  2. Marinate for 45 minutes in soy sauce sesame oil and ginger
  3. Mix ketchup water vinegar and sugar and set aside
  4. Put marinated chicken and cornstarch in Ziploc bag and shake until well coated
  5. Preheat skillet or wok add 1 tablespoon vegetable oil and add chicken breasts a few at a time
  6. Brown chicken then remove from skillet
  7. Put in 1 teaspoon vetetable oil in skillet and add vegetables stir constantly and cook for 5 mintues
  8. Pour sweet and sour sauce over vegetables bring to boil add chicken and cook 10 minutes to thicken
  9. Serve with rice 6 to 8 servings
