Healthy Vegetable Stew

Ingredients

  • 1 c sliced onion
  • 2 c diced raw potatoes
  • 1 15 oz can kidney beans drained
  • 14 c uncooked rice
  • 1 c sliced celery
  • 1 tsp salt
  • 14 tsp chili powder
  • 14 tsp Worcestershire sauce
  • 1 15 oz can tomato sauce
  • 18 tsp pepper
  • 12 c water

Directions

  1. Arrange onion potatoes kidney beans uncooked rice and celery in layers in order listed in a covered casserole sprayed with Pam
  2. Preheat oven to 325
  3. Mix spices and tomato sauce well and pour over stew layers in casserole
  4. Cover and simmer 1 14 hours or until potatoes are tender
  5. Do not stir but check occasionally to be sure it does not boil dry
  6. Makes 4 servings
