Healthy Vegetable Stew
Ingredients
- 1 c sliced onion
- 2 c diced raw potatoes
- 1 15 oz can kidney beans drained
- 14 c uncooked rice
- 1 c sliced celery
- 1 tsp salt
- 14 tsp chili powder
- 14 tsp Worcestershire sauce
- 1 15 oz can tomato sauce
- 18 tsp pepper
- 12 c water
Directions
- Arrange onion potatoes kidney beans uncooked rice and celery in layers in order listed in a covered casserole sprayed with Pam
- Preheat oven to 325
- Mix spices and tomato sauce well and pour over stew layers in casserole
- Cover and simmer 1 14 hours or until potatoes are tender
- Do not stir but check occasionally to be sure it does not boil dry
- Makes 4 servings
