Hearty Chicken Pot Pie

Ingredients

• 1 c 10 34 oz condensed chicken broth
• 1 13 c water divided
• 4 med carrots thinly sliced about 1 12 c
• 3 med red potatoes scrubbed and diced about 1 12 c
• 2 Tbsp olive oil
• 2 c quartered med mushrooms
• 1 med onion coarsely chopped
• 1 c frozen peas
• 13 c all-purpose flour
• 1 refrigerated unbaked pie crust for 9-inch pie
• 2 12 c chopped cooked chicken

Directions

1. Combine broth 1 c water carrots and potatoes in a medium saucepan
2. Bring to a boil reduce heat and simmer over low heat 10 minutes
