Hearty Corn Chowder

Ingredients
- 1 12 onions finely chopped
- 2 Tbsp oil
- 1 c water
- 3 potatoes peeled and chopped
- 1 12 tsp salt
- 14 tsp pepper
- 1 16 oz can corn drained
- 2 c skim milk
Directions
- Saute onion in oil
- Add water potatoes and seasonings
- Cook until potatoes are tender about 15 minutes
- Mash potatoes slightly
- Add corn and milk
- Heat until simmering
- Be careful soup does not boil
- Serve with parsley garnish if desired
