Hearty Potato Soup
Ingredients
- 3 c diced peeled potatoes 3 medium
- 2 c water
- 1 tsp salt
- 34 c chopped onion
- 2 Tbsp margarine
- 2 Tbsp flour
- 2 c milk
- 1 tsp parsley flakes
- 14 tsp pepper
Directions
- Cook potatoes until tender
- Without draining them mash until size of pea
- Meanwhile cook onion in margarine for 3 minutes Sprinkle with flour
- Cook and stir 1 minute
- Gradually stir in milk and cook stirring often 5 to 7 minutes until simmering and thickened
- Stir in potato mixture and remaining ingredients Yields 4 servings 234 calories
