Herb-Roasted Potatoes

Ingredients
- 2 lb red potatoes
- 1 onion
- 1 green pepper
- 1 red pepper
- 12 c garlic and herb salad dressing
Directions
- Cut the vegetables into chunks
- Heat oven to 400
- Mix all ingredients in shallow baking pan in a single layer
- Bake for 45 minutes or until potatoes are tender and golden brown stirring occasionally
- Serves 4 to 6
