Herb Omelet

Ingredients
- 1 egg
- 1 tsp drained pimento chopped
- 12 tsp parsley flakes
- 14 c chopped mushrooms
- 1 Tbsp skim milk
- pinch of basil
- salt and pepper to taste
Directions
- Beat egg and milk together
- Pour into warm nonstick pan
- As egg mixture sets lift gently with spatula so uncooked mixture flows beneath
- Cover egg mixture with mushrooms pimento basil parsley salt and pepper
- Fold in half
- Serve on heated plate
