Herb Omelet

Ingredients

  • 1 egg
  • 1 tsp drained pimento chopped
  • 12 tsp parsley flakes
  • 14 c chopped mushrooms
  • 1 Tbsp skim milk
  • pinch of basil
  • salt and pepper to taste

Directions

  1. Beat egg and milk together
  2. Pour into warm nonstick pan
  3. As egg mixture sets lift gently with spatula so uncooked mixture flows beneath
  4. Cover egg mixture with mushrooms pimento basil parsley salt and pepper
  5. Fold in half
  6. Serve on heated plate
