Herbed Chicken Bake
Ingredients
- 1 6 oz pkg long grain and wild rice mix
- 3 large chicken breasts boned and halved
- 14 c butter or margarine
- 1 10 oz can condensed cream of chicken soup
- 34 c cooking wine Sauterne
- 12 c diced celery
- 1 3 oz can mushrooms drained
- 2 Tbsp chopped canned pimento
Directions
- Prepare rice mix using package directions
- Season chicken with salt and pepper in skillet
- Brown slowly in butter
- Spoon rice into 1 12-quart casserole
- Top with chicken skin side up
- Add soup to skillet
- Slowly add Sauterne stirring until smooth
- Add remaining ingredients
- Bring to boil
- Pour over chicken
- Cover and bake at 350 for 25 minutes
- Uncover and bake 15 to 20 minutes or until tender
- Serves 6
