Herbed Potato Soup

Ingredients

  • 8 medium potatoes
  • 2 onions chopped
  • 4 Tbsp butter
  • 2 Tbsp chopped parsley
  • 12 tsp crushed basil
  • 4 Tbsp flour
  • 2 tsp salt
  • 12 tsp pepper
  • 2 c cold milk
  • 2 c hot potato water

Directions

  1. Cook potatoes and onions together until potatoes are tender drain
  2. Save the potato water
  3. Put the potatoes through ricer or coarse strainer
  4. While potatoes are cooking melt butter in heavy 6-quart saucepan
  5. Add chopped parsley and basil
  6. Blend in flour and seasoning
  7. Gradually stir in cold milk
  8. Add potato water Cook over medium heat stirring constantly until mixture thickens slightly
  9. Stir in potatoes and onions heat
  10. Makes about 12 cups
  11. Can be frozen
