Holiday Cauliflower

Ingredients

  • 1 large head cauliflower
  • 1 2 oz can sliced mushrooms
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 c milk
  • 12 tsp salt
  • 12 c shredded Swiss cheese
  • 1 Tbsp chopped pimento

Directions

  1. Bread cauliflower into medium sized flowerets cook in boiling water until tender about 10 minutes
  2. Drain well set aside
  3. In saucepan saute mushrooms in butter
  4. Blend in flour gradually Stir in milk
  5. Cook stirring constantly over medium heat until thick
  6. Stir in salt cheese and pimento
  7. Place 12 of cauliflower in buttered 2-quart casserole
  8. Cover with 12 the sauce
  9. Add remaining cauliflower and top with remaining sauce Bake at 325 for 15 minutes
