Holiday Orange-Blueberry Bread
Ingredients
- 3 c flour
- 12 tsp baking soda
- 12 c butter melted
- 1 Tbsp grated orange rind
- 34 c sugar
- 14 tsp salt
- 23 c orange juice
- 12 c chopped pecans
- 1 Tbsp baking powder
- 3 eggs
- 12 c milk
- 1 c blueberries
Directions
- Sift dry ingredients together
- Beat eggs
- Add butter orange juice milk and orange rind
- Mix well
- Pour liquid mixture into dry ingredients and stir only until well moistened
- Carefully fold in nuts and blueberries
- Pour into 5 x 9-inch buttered and floured loaf pan
- Bake at 350 approximately 60 minutes or until toothpick stuck in center comes out clean
- Let set 10 minutes before removing from pan
- Cool on rack
- Wrap and refrigerate overnight before slicing
