Holiday Pecan Logs

Ingredients

  • 2 tsp plus 12 cup butter no substitutes softened and divided
  • 3 34 cups powdered sugar
  • 12 cup instant non-fat dry milk powder
  • 12 cup sugar
  • 12 light corn syrup
  • 1 tsp vanilla
  • 1 pkg caramels 14 oz
  • 1 Tbsp milk or cream
  • 2 cups chopped pecans

Directions

  1. Butter an 8 inch square pan with 2 tsp butter set aside Combine powdered sugar and dry milk set aside
  2. In a heavy saucepan combine 12 cup butter sugar and corn syrup cook and stir until it comes to a boil and sugar is dissolved
  3. Stir in powdered sugar about 13 at a time until blended
  4. Remove from heat and stir in vanilla
  5. Continue stirring until mixture thickens and mounds slightly when dropped from a spoon
  6. Spread into prepared pan
  7. Cool
  8. Cut candy into four strips
  9. Cut each strip in half
  10. Shape each strip into a log shape
  11. Wrap in waxed paper twist the ends
  12. Freeze or refrigerate until firm
  13. In heavy saucepan or microwave melt caramels with milk
  14. Stir often Roll logs in caramel mixture then in pecans
  15. Wrap in waxed paper Store at room temperature in airtight containers
  16. Cut into slices with serrated knife
