Hollandaise Sauce

Ingredients
- 1 stick butter
- 3 egg yolks
- 2 Tbsp lemon juice
- 14 tsp salt
- pinch of cayenne or Tabasco sauce or white pepper
Directions
- In a small saucepan heat to bubbling but do not brown the butter
- Into blender container put
- 3 egg yolks 2 tablespoons lemon juice salt and pepper
- Cover container and turn to low speed
- Immediately remove cover and put in the hot butter in a steady stream
- When all butter is blended turn off motor
- Makes 34 cup
