Hollandaise Sauce

Ingredients

  • 1 stick butter
  • 3 egg yolks
  • 2 Tbsp lemon juice
  • 14 tsp salt
  • pinch of cayenne or Tabasco sauce or white pepper

Directions

  1. In a small saucepan heat to bubbling but do not brown the butter
  2. Into blender container put
  3. 3 egg yolks 2 tablespoons lemon juice salt and pepper
  4. Cover container and turn to low speed
  5. Immediately remove cover and put in the hot butter in a steady stream
  6. When all butter is blended turn off motor
  7. Makes 34 cup
