Hominy

Ingredients
- 5 oz lye
- 6 qt cold water
- 5 qt shelled corn
- 5 Tbsp salt
Directions
- Dissolve the lye in the cold water
- Stir in the shelled corn and let stand for 15 hours
- Drain off the lye water and put the corn in a sack
- Rub and wash it in the sack through running water After the hulls are off the corn take it out of the sack and cook for 3 or 4 hours or until tender
- Change the water 2 or 3 times while it is cooking
