Honey-Pecan Pork Cutlets

Ingredients

  • 1 lb boneless pork loin cutlets pounded to 14-inch thickness
  • 12 c all-purpose flour
  • 3 Tbsp butter divided
  • 14 c honey
  • 14 c chopped pecans

Directions

  1. Dredge cutlets in flour shaking off excess
  2. Heat 1 tablespoon butter in a heavy skillet over medium heat
  3. Add cutlets and brown on both sides about 5 or 6 minutes
  4. Stir together remaining 2 tablespoons of butter honey and pecans
  5. Add to skillet and stir gently
  6. Cover and simmer gently for 7 to 8 minutes
  7. Remove cutlets to serving platter cover with remaining sauce from pan Makes 4 servings
