Honey-Poached Apples

Ingredients
- 2 small apples
- 2 tsp lemon juice divided
- 34 c water
- 2-inch strip lemon peel
- 2 tsp honey
- 1 tsp vanilla extract
Directions
- Core and pare apples
- Cut into thin wedges and place in bowl with water to cover
- Add 1 teaspoon lemon juice and set aside
