Honey Cake

Ingredients

  • 3 c sifted flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 12 tsp salt
  • 1 c granulated sugar
  • 1 c boiling coffee
  • 2 Tbsp chopped nuts if desired
  • 1 tsp baking soda
  • 1 tsp ginger
  • 1 tsp nutmeg
  • 3 eggs
  • 1 c honey
  • 2 Tbsp oil or melted shortening

Directions

  1. Sift flour
  2. Measure and sift with baking powder baking soda spices and salt
  3. Beat eggs until thick and light about 5 minutes
  4. Add sugar gradually beating well Add honey coffee and shortening
  5. Blend well
  6. Add dry ingredients
  7. Beat until well blended
  8. Sprinkle nuts on bottom of greased and waxed paper lined 9 x 13-inch pan
  9. Bake in moderate oven 375 for 35 to 40 minutes or until done
  10. Let stand in pan 5 minutes then turn out on rack
  11. Cut into squares
  12. Yield 24 servings
