Honey Walleye

Ingredients

• 1 egg
• 2 tsp honey
• 2 c butter-flavored crackers
• 12 tsp salt
• 4 to 6 walleye fillets
• 13 c cooking oil
• lemon wedge

Directions

1. In shallow bowl beat egg add honey
2. In plastic bag combine crackers and salt
3. Smash crackers until fine
4. Coat fillets in egg
5. Place in bag and shake
6. Cook fillets in oil 3 to 5 minutes a side
7. Serve with lemon wedge
