Hopi Fried Green Chiles

Ingredients

  • 12 fresh green chile pods
  • 4 Tbsp salt pork drippings
  • shortening

Directions

  1. Wash clean and remove stems from fresh green chiles but not seeds
  2. Cut a little slot in each side which lets the steam out when frying
  3. Heat 2 tablespoons of pork drippings in frying pan Add chiles
  4. Turn often until chiles are light brown
  5. Add shortening to complete cooking
  6. Eat hot or cold allowing 2 per person
