Hoppin John
Ingredients
- 1 16 oz pkg black-eyed peas
- 6 cups water
- 8 oz slab bacon cut into cubes
- 1 tsp Tabasco sauce
- 1 tsp salt
- 2 medium onions chopped
- 1 cup raw rice
- 1 12 cups boiling water
Directions
- Wash peas and place in large pan with cold water
- Bring to a boil and boil 2 minutes
- Remove from heat cover and let sit for 1 hour
- Fry bacon slowly until brown drain
- Add Tabasco sauce bacon and salt to peas
- Bring to a boil lower heat and simmer stirring frequently for 30 minutes or until rice is tender Should be moist but not wet
- Makes 6 servings
