Hoppin John Soup

Ingredients

• 1 lb sausage
• 3 cans black-eyed peas
• 1 medium onion diced
• 1 c Minute rice cooked
• 1 12 c water
• salt and pepper to taste

Directions

1. Fry sausage and drain Add peas and juice onion salt pepper water and sausage
2. Bring to a boil and cook on medium heat 30 to 45 minutes
3. Add cooked rice and let simmer 10 minutes
