Hoppin Juan Skillet Cakes
Ingredients
- 1 lb cooked black-eyed peas
- 1 12 c cooked brown rice
- 1 medium onion finely diced
- 14 c plain dried bread crumbs
- 14 c Weight Watchers fat-free mayonnaise dressing
- 2 tsp chili powder
- 12 tsp ground cumin
- 14 tsp ground red pepper
- 1 Tbsp plus 1 tsp olive oil
- 1 c picante sauce
- 12 c diced scallions with tops
- 2 Tbsp plus 2 tsp Weight Watchers ultimate 90 plain nonfat yogurt
Directions
- Preheat oven to 400
- Spray baking sheet with nonstick cooking spray
- In medium bowl coarsely mash black-eyed peas Add rice onion bread crumbs mayonnaise dressing chili powder cumin and red pepper
- Divide mixture into 8 13 cup portions Shape each portion into a 12-inch thick patty
