Ingredients

  • 1 c sliced celery
  • 23 c chopped onion
  • 1 minced clove garlic
  • 1 Tbsp oil
  • 4 c water
  • 2 10 34 oz cans chicken broth
  • 16 oz pkg frozen black-eyed peas
  • 12 lb cooked ham cut into cubes
  • 14 tsp red pepper
  • 1 bay leaf
  • 3 c cooked rice

Directions

  1. Saute celery onion and garlic in oil in large Dutch oven until tender
  2. Add water and remaining ingredients except rice Simmer for 40 minutes until peas are tender
  3. Remove bay leaf and serve over rice
