Hopping John

Ingredients
- 1 c sliced celery
- 23 c chopped onion
- 1 minced clove garlic
- 1 Tbsp oil
- 4 c water
- 2 10 34 oz cans chicken broth
- 16 oz pkg frozen black-eyed peas
- 12 lb cooked ham cut into cubes
- 14 tsp red pepper
- 1 bay leaf
- 3 c cooked rice
Directions
- Saute celery onion and garlic in oil in large Dutch oven until tender
- Add water and remaining ingredients except rice Simmer for 40 minutes until peas are tender
- Remove bay leaf and serve over rice
