Ingredients

  • 14 c cloud ears
  • 14 c golden needles
  • 14 c ground pork shredded into 1 12-inch long strips
  • 3 Tbsp cornstarch
  • 2 tsp sherry
  • 12 c water
  • 3 Tbsp white wine vinegar or to taste
  • white pepper to taste
  • 12 tsp hot oil
  • 2 tsp sesame seed oil
  • 4 c chicken stock
  • salt to taste
  • 1 Tbsp soy sauce
  • 2 bean curds each cut into 8 pieces
  • 1 egg beaten
  • 2 scallions chopped

Directions

  1. Soak cloud ears and golden needles in hot water about 15 minutes or until noticeably increased in size drain
  2. Shred cloud ears
  3. Cut golden needles in half
