Hot Bean Compote

Ingredients
- 4 slices bacon
- 13 c sugar
- 1 Tbsp cornstarch
- 1 tsp salt
- 18 tsp pepper
- 12 c vinegar
- 1 medium onion sliced
- 1 12 c 1 lb cut green beans drained
- 1 12 c cut wax beans
- 1 12 c red kidney beans
Directions
- In 2-quart casserole arrange bacon in a single layer
- Cover with paper towel and cook 2 12 minutes
- Remove towel and bacon leaving drippings
- Add sugar cornstarch salt and pepper blend well
- Stir in vinegar and remaining ingredients
- Cook covered 10 minutes or until sauce has boiled or thickened slightly stirring occasionally
- Crumble bacon over top
- Serves 8 to 10
