Hot Bean Compote

Ingredients

  • 4 slices bacon
  • 13 c sugar
  • 1 Tbsp cornstarch
  • 1 tsp salt
  • 18 tsp pepper
  • 12 c vinegar
  • 1 medium onion sliced
  • 1 12 c 1 lb cut green beans drained
  • 1 12 c cut wax beans
  • 1 12 c red kidney beans

Directions

  1. In 2-quart casserole arrange bacon in a single layer
  2. Cover with paper towel and cook 2 12 minutes
  3. Remove towel and bacon leaving drippings
  4. Add sugar cornstarch salt and pepper blend well
  5. Stir in vinegar and remaining ingredients
  6. Cook covered 10 minutes or until sauce has boiled or thickened slightly stirring occasionally
  7. Crumble bacon over top
  8. Serves 8 to 10
