Hot Chicken Sandwiches
Ingredients
- 1 small chicken
- 6 Tbsp 14 c plus 2 Tbsp butter or margarine melted
- 6 Tbsp 14 c plus 2 Tbsp flour
- 1 tsp salt
- 18 tsp pepper
- 2 12 c chicken broth
- 12 c thinly sliced celery
Directions
- Cook chicken without salt until done Shred into small pieces
- Make roux out of butter flour salt and pepper blend together over low heat until bubbly
- Remove from heat and stir in chicken broth
- Bring to boil boil 1 minute
- Stir in 2 cups shredded chicken and celery
- The celery will stay rather crisp Makes enough to fill 15 sandwiches depending on the size of buns
