Hot Chili Sauce

Ingredients

  • 14 lb tomatoes 1 peck
  • 2 red hot peppers 12 c chopped
  • 2 large white onions 3 c chopped
  • 2 Tbsp salt
  • 1 Tbsp celery seed
  • 34 c light brown sugar
  • 1 qt cider vinegar

Directions

  1. Wash tomatoes and dip into boiling water long enough to loosen skins
  2. then remove skins and core Cut up and place in colander to
  3. drain
  4. Save
  5. drained
  6. juice
  7. and
  8. put in 8 quart kettle
  9. and boil
  10. about 30 minutes Add other ingredients and cook
  11. moderately fast stirring often until sauce thickens to desired consistency about 2 12 hours Store in pint or 12 pint jars
