Hot Cider Dressing For Spinach Salad

Ingredients

• 1 c unsweetened apple juice
• 12 c sliced purple onion
• 12 c water
• 12 c cider vinegar
• 2 Tbsp brown sugar
• 1 Tbsp cornstarch
• 2 tsp poppy seed
• 2 tsp Dijon mustard

Directions

1. Combine apple juice and onion in medium non-aluminum saucepan Cook over medium heat 4 minutes or until onion is tender
2. Add remaining ingredients
3. Stir well Bring mix to a boil over medium heat
4. Cook 1 minute or until thickened stirring constantly Serve warm over spinach salad
5. Yields 1 12 cups
