Hot Gourmet Deer Chili
Ingredients
- 2 12 lb deer meat
- 12 lb bacon ends
- 1 Tbsp olive oil
- 5 large cloves garlic minced
- 1 medium onion chopped
- 2 8 oz cans Contadina tomato sauce
- 5 c water
- 1 c Budweiser beer
- 1 10 oz can Ro-Tel tomatoes with green chilies diced
- 2 tsp Louisiana red hot sauce
- 1 beef bouillon cube
- 9 Tbsp chili powder
- 2 tsp paprika
- 2 tsp ground oregano
- 4 tsp ground cumin
- 3 tsp salt
- 3 tsp ground red pepper
- 1 tsp crushed red pepper
- 1 tsp ground white pepper
- 1 tsp ground black pepper
- 3 hot jalapeno peppers diced with seeds
- 2 Tbsp Heinz hot ketchup
- 20 crackers finely ground

- Cube meat and
- grind
- with
- hamburger plate of electric grinder
- In a large
- pot heat olive oil and saute garlic for 1 minute
- Add onion

- meat
- Cook
- until
- meat is done Add next 17

- bring
- to a boil
- Cover and simmer 1 hour
- stirring occasionally
- Slowly stir in cracker meal
- Let simmer 10 more minutes stirring frequently
- Serve hot with crackers Fritos or French-style garlic bread
