Hot Potato Salad

Ingredients

• 4 slices bacon
• 2 Tbsp butter
• 1 c sliced celery
• 14 c green onion
• 2 Tbsp flour
• 2 Tbsp sugar
• 2 tsp salt
• 1 tsp paprika
• 1 tsp dry mustard
• 14 tsp pepper
• 1 c milk
• 14 c vinegar
• 4 c potatoes sliced 4 to 6
• 12 c green pepper
• 12 c sour cream

Directions

1. Cook bacon drain and crumble
2. Melt butter
3. Add celery and onion saute
4. Combine flour sugar salt paprika mustard pepper and milk cook and stir constantly until thick
5. Add vinegar potatoes and green pepper stir to coat
6. Heat thoroughly
7. Stir in sour cream sprinkle with bacon just before serving
8. Serves 4 to 6
