Hot Potato Salad
Ingredients
- 4 slices bacon
- 2 Tbsp butter
- 1 c sliced celery
- 14 c green onion
- 2 Tbsp flour
- 2 Tbsp sugar
- 2 tsp salt
- 1 tsp paprika
- 1 tsp dry mustard
- 14 tsp pepper
- 1 c milk
- 14 c vinegar
- 4 c potatoes sliced 4 to 6
- 12 c green pepper
- 12 c sour cream
Directions
- Cook bacon drain and crumble
- Melt butter
- Add celery and onion saute
- Combine flour sugar salt paprika mustard pepper and milk cook and stir constantly until thick
- Add vinegar potatoes and green pepper stir to coat
- Heat thoroughly
- Stir in sour cream sprinkle with bacon just before serving
- Serves 4 to 6
