Hungarian Gulya'S

Ingredients

  • 1 lb. beef chuck
  • 1 Tbsp. salt
  • 1 medium onion
  • 2 Tbsp. oil
  • 1 tsp. paprika
  • 3 carrots
  • 2 tsp. parsley
  • 1 qt. water
  • 4 medium potatoes
  • 1/4 tsp. black pepper

Directions

  1. Cut beef into 1-inch squares.
  2. Add 1 1/2 teaspoons salt.
  3. Chop the onion fine and brown in oil.
  4. Add beef and paprika.
  5. Let beef simmer in its own juice for 1 hour.
  6. Add sliced carrots and chopped parsley.
  7. Simmer for 1/2 hour.
  8. Add water, diced potatoes and remaining 1 1/2 teaspoons salt.
  9. Simmer until potatoes are done; add black pepper.
