Hungarian Gulya'S

Ingredients
- 1 lb. beef chuck
- 1 Tbsp. salt
- 1 medium onion
- 2 Tbsp. oil
- 1 tsp. paprika
- 3 carrots
- 2 tsp. parsley
- 1 qt. water
- 4 medium potatoes
- 1/4 tsp. black pepper
Directions
- Cut beef into 1-inch squares.
- Add 1 1/2 teaspoons salt.
- Chop the onion fine and brown in oil.
- Add beef and paprika.
- Let beef simmer in its own juice for 1 hour.
- Add sliced carrots and chopped parsley.
- Simmer for 1/2 hour.
- Add water, diced potatoes and remaining 1 1/2 teaspoons salt.
- Simmer until potatoes are done; add black pepper.
