Idaho Potato Cake

Ingredients
- 1 c butter or margarine
- 2 c sugar
- 2 eggs
- 1 c cold mashed potatoes
- 1 tsp vanilla extract
- 2 c all-purpose flour
- 14 c baking cocoa
- 1 tsp baking soda
- 1 c milk
- 1 c chopped nuts
Directions
- In a mixing bowl cream butter and sugar until fluffy
- Add eggs one at a time beating well after each addition
- Blend in potatoes and vanilla
- Combine flour cocoa and baking soda
- Add alternately with milk blending well after each addition
- Stir in nuts
- Pour into a greased 13 x 9 x 2-inch baking pan
- Bake at 350 for 40 to 45 minutes or until cake tests done
- Cool on a wire rack
