Indian Black-Eyed Peas And Potatoes

Ingredients

  • 1 tsp cooking oil
  • 1 tsp mustard seed
  • 12 tsp cumin seed
  • 12 c chopped onion
  • 2 cloves garlic minced
  • 1 15 oz can black-eyed peas
  • 1 large potato peeled and chopped
  • 12 tsp ground ginger
  • 12 tsp ground turmeric
  • dash of ground red pepper

Directions

  1. In skillet heat oil
  2. Add mustard seed
  3. Cover and cook until seed begins to pop
  4. Remove from heat
  5. Remove lid stir in cumin Add onion and garlic
  6. Cook and stir until onion is tender but not brown
  7. Stir in undrained black-eyed peas potatoes ginger turmeric and red pepper
  8. Bring to boil
  9. Reduce heat simmer for 15 minutes
  10. Serves 4 to 5
