Indian Salmon Croquettes
Ingredients
- 1 15 oz red or pink salmon
- 1 medium onion diced small pieces
- 1 medium green pepper diced small pieces
- 8 crushed saltines
- 2 large eggs
- 1 tsp salt
- 12 tsp freshly ground black pepper
- 12 tsp garlic powder
- olive oil for cooking
- flour
- Indian chutney
Directions
- In large bowl drain and pulverize salmon
- Add all ingredients mixing thoroughly
- Mixture should be moist and not too chunky
- Pour top olive oil into heavy iron skillet and heat over medium heat
- Shape croquettes to desired size dust with flour on both sides and cook turning them once until golden brown on both sides about 4 to 5 minutes
- Serve hot
