Instant Rice Pudding

Ingredients

• 1 c instant rice
• 14 tsp salt
• 18 tsp nutmeg
• 14 c raisins optional
• 12 tsp vanilla
• 2 12 c milk divided
• 14 tsp cinnamon
• 12 c sugar
• 2 eggs slightly beaten

Directions

1. Combine rice 2 cups milk salt cinnamon sugar nutmeg and raisins
2. Bring to a rolling boil stirring constantly
3. Reduce heat boil slowly for 10 minutes stirring occasionally
4. Mix eggs with remaining milk
5. Slowly add to hot mixture stirring constantly
6. Cook over medium heat until thickened
7. Add vanilla Let cool
8. Makes 6 servings
