IreneS Funnel Cakes

Ingredients

  • 2 12 c self-rising flour
  • 14 c sugar
  • 1 13 c milk
  • 2 eggs slightly beaten
  • vegetable oil
  • sifted powdered sugar optional
  • funnel with 38-inch opening

Directions

  1. Combine first 4 ingredients in a bowl beating until smooth Heat 14 inch oil to 375 in a skillet
  2. Cover bottom opening of funnel with finger
  3. Pour 14 cup batter into funnel
  4. Hold funnel over skillet remove finger from funnel to release batter into hot oil
  5. Move funnel in a slow circular motion to form a spiral
  6. Fry one minute or until edges are golden brown
  7. Turn and fry until golden
  8. Drain on paper towel
  9. Sprinkle with powdered sugar
