Irish Potato Cake

Ingredients

• 1 c butter
• 2 c sugar
• 2 c cooked mashed potatoes
• 1 tsp vanilla flavoring
• 1 tsp lemon flavoring
• 1 tsp ground cloves
• 1 tsp ground nutmeg
• 4 eggs well beaten
• 1 c chopped nuts
• 1 tsp allspice
• 1 tsp cinnamon
• 12 c milk
• 2 c flour
• 1 Tbsp cocoa
• 1 c raisins
• 14 c flour
• 1 Tbsp soda

Directions

1. Cream butter and sugar
2. Add potatoes extracts and spices Mix well
3. Add milk
4. Combine flour soda and cocoa
5. Add the creamed mixtures
6. Add well beaten eggs
7. Dredge nuts and raisins with 14 cup flour add to batter
8. Pour into a greased 10-inch tube pan and bake at 300 for 2 hours
