Irish Potatoes
Ingredients
- 1 medium baked potato or mashed
- 1 lb confectioners sugar
- 1 tsp vanilla
- 1 to 1 12 c flaked coconut
- cinnamon
Directions
- In medium size mixing bowl mash the hot pulp of baked potato with a fork
- Add the sugar and blend well
- If the pulp is not hot enough to melt sugar place bowl in larger bowl with hot water
- Add vanilla and coconut work into mixture thoroughly Form dough into small rounds and roll each one in cinnamon lightly
