Island Style Chicken

Ingredients

  • 1 8 oz can pineapple chunks in heavy syrup
  • 2 lb chicken parts
  • 2 Tbsp shortening
  • 1 can chicken broth
  • 14 c vinegar
  • 2 Tbsp brown sugar
  • 2 Tbsp soy sauce
  • 1 large clove garlic minced
  • 1 medium green pepper cut up
  • 2 Tbsp cornstarch
  • 14 c water

Directions

  1. Drain pineapple chunks reserving syrup
  2. In skillet brown chicken in shortening
  3. Pour off fat
  4. Add reserved syrup broth vinegar sugar soy sauce and garlic
  5. Cover
  6. Cook over low heat 40 minutes
  7. Add green pepper and pineapple chunks
  8. Cook 5 minutes more or until done
  9. Stir occasionally
  10. Combine cornstarch and water
  11. Gradually stir into sauce
  12. Cook stirring until thickened Serve over cooked parsleyed rice
  13. Makes 4 servings
