Italian Cream Cake

Ingredients

  • 1 c buttermilk
  • 1 stick butter
  • 12 c shortening
  • 2 c sugar
  • 5 egg yolks
  • 5 egg whites
  • 2 c flour
  • 1 tsp soda
  • 1 tsp vanilla
  • 1 small can coconut
  • 1 c pecans

Directions

  1. Cream butter shortening and sugar
  2. Add egg yolks
  3. Combine flour and soda
  4. Alternate with buttermilk
  5. Beat egg whites until stiff
  6. Fold in egg whites coconut nuts and vanilla
  7. Bake in 3 greased and floured cake pans at 350 for 25 minutes
