Italian Cream Cake

Ingredients

  • 1 stick margarine
  • 12 c shortening
  • 2 c sugar
  • 5 egg yolks
  • 2 c flour
  • 1 tsp soda
  • 1 c buttermilk
  • 1 tsp vanilla
  • 1 small can coconut
  • 1 c chopped nuts
  • 5 egg whites beaten stiff

Directions

  1. Cream margarine and shortening
  2. Add sugar
  3. Beat well
  4. Add egg yolks
  5. Combine flour and soda add to mixture along with buttermilk
  6. Add vanilla
  7. Add coconut and nuts
  8. Fold in egg whites
  9. Bake in 3 pans at 250 for 25 minutes
  10. Top with Cream Cheese Frosting
