Italian Creme Cake

Ingredients

  • 2 c sugar
  • 5 eggs separated
  • 1 stick oleo
  • 12 c Crisco
  • 1 c buttermilk
  • 1 small can coconut
  • 2 c flour sifted
  • 1 tsp soda
  • 1 c pecans chopped
  • 1 tsp vanilla

Directions

  1. Cream oleo sugar and Crisco
  2. Add beaten egg yolks
  3. Add soda to buttermilk
  4. Alternate adding buttermilk and flour to creamed mixture
  5. Add pecans coconut and vanilla
  6. Beat egg whites until stiff and fold into mixture
  7. Bake three layers at 350 for 25 to 30 minutes Do not overbake
