Italian Creme Cake

Ingredients

  • 1 c buttermilk
  • 1 t soda
  • 2 c sugar
  • 14 lb margarine
  • 12 c shortening
  • 5 egg yolks
  • 2 c flour
  • 1 t vanilla
  • 5 egg whites stiffly beaten
  • 1 c chopped pecans
  • 1 sm can chopped coconut

Directions

  1. Combine buttermilk and soda and let stand for a few minutes Cream together sugar margarine and shortening
  2. Add egg yolks one at a time
  3. Add flour alternately with buttermilk mixture
  4. Fold in vanilla eggs whites pecans and coconut
  5. Bake at 325 degrees for approximately 25-30 in 3 greased pans
