Italian Eggplant Casserole

Ingredients
- 1 medium unpeeled eggplant diced
- 3 medium onions chopped
- 2 Tbsp butter
- 2 beaten egg yolks
- 12 c grated Parmesan cheese
- 1 tsp salt
- 1 c cracker crumbs
Directions
- Cook eggplant and onions in water to cover 20 minutes
- Drain and add remaining ingredients
- Place in greased casserole and bake in moderate oven at 350 for 30 minutes or until brown Serves 6
