Italian Eggplant Casserole

Ingredients

  • 1 medium unpeeled eggplant diced
  • 3 medium onions chopped
  • 2 Tbsp butter
  • 2 beaten egg yolks
  • 12 c grated Parmesan cheese
  • 1 tsp salt
  • 1 c cracker crumbs

Directions

  1. Cook eggplant and onions in water to cover 20 minutes
  2. Drain and add remaining ingredients
  3. Place in greased casserole and bake in moderate oven at 350 for 30 minutes or until brown Serves 6
