Italian Lemon Chicken

Ingredients
- 1 whole chicken cut in pieces
- 3 lemons
- 14 c oil
- 12 c vinegar
- 1 tsp salt
- 1 spearmint plant cut very fine or 2 Tbsp basil
Directions
- Preheat oven to 400
- Combine all ingredients except chicken Lay chicken in a 13 x 9-inch baking pan
- Use 2 pans if necessary
- Pour ingredient mixture over chicken
- Add water enough water to cover chicken
- Bake in oven for 15 minutes at 400
- Turn oven down to 350 and bake for another 45 minutes
