Italian Skillet Frittata

Ingredients
- 3 tbsp oil
- 2 c frozen shredded has brown potatoes
- 1 c broccoli florets
- 1 c red pepper
- 1 c carrots
- 1 c green onions
- 1 c tomatoes
- Parsley
- 6 eggs lightly beaten
- 2 tbsp milk or water
- 34 c grated parmesan cheese divided
Directions
- Heat oil in large nonstick skillet on medium high heat Add potatoes and vegetables Cook 5 minutes or until potatoes are browned stirring occasionally
