Italian Squash PieLow-Fat
Ingredients
- 4 c thinly sliced yellow squash
- 12 c chopped onion
- 12 c chopped bell pepper
- 12 c chopped celery
- 12 c fresh parsley chopped or 2 Tbsp dry parsley
- 12 tsp salt
- 12 tsp pepper
- 1 Pet ready pie crust
- 14 tsp oregano
- 2 c shredded Mozzarella cheese
- 1 c shredded sharp Cheddar cheese
- 12 c shredded carrots
- 3 eggs substitute
- 1 Tbsp Mrs Dash original seasoning
- 1 Tbsp prepared mustard
Directions
- Cook vegetables in microwave or skillet sprayed with vegetable spray until tender
- Add cheese to egg substitute
- Add seasonings mix well
- Place pie crust in glass pie plate spread mustard on bottom of crust
- Add vegetables
- Pour cheese and egg mixture over top
- Bake at 375 for 18 to 20 minutes or until knife inserted in center comes out clean
