Italian Wedding Soup

Ingredients

  • 4 chicken breasts skinned
  • 3 qt water
  • salt to taste
  • 12 tsp pepper
  • 1 medium chopped onion
  • 12 c celery diced
  • 1 c carrots diced
  • 1 pkg frozen spinach
  • 34 c acini de pepe cooked
  • 1 small can mashed tomatoes
  • grated Parmesan cheese
  • 1 Tbsp parsley

Directions

  1. Wash chicken place in large pot with water and boil
  2. Remove foam that forms
  3. Add salt pepper onion celery and carrots Cook 2 hours or until meat is tender
  4. Remove chicken and shred Add spinach and already cooked pasta
  5. Add shredded chicken and tomatoes
  6. Cook 12 hour longer
  7. More water may be added if necessary
  8. Add cheese garnish with parsley and serve while hot
