Italian Zucchini Pie

Ingredients

• 4 c unpeeled zucchini shredded
• 1 c coarsely chopped onion
• 14 c margarine
• 1 tsp parsley
• 12 Tbsp salt
• 14 tsp pepper
• 14 tsp garlic
• 14 tsp basil
• 14 tsp oregano
• 2 eggs well beaten
• 8 oz shredded Mozzarella cheese
• 1 prepared pie shell

Directions

1. Heat oven to 375
2. Cook onion and zucchini in butter
3. Add seasonings
4. Blend eggs and cheese in large bowl
5. Stir in vegetables
6. Put teaspoon mustard in prepared pie shell
7. Pour in ingredients
8. Bake 20 minutes
