Italian Zucchini Pie

Ingredients
- 4 c unpeeled zucchini shredded
- 1 c coarsely chopped onion
- 14 c margarine
- 1 tsp parsley
- 12 Tbsp salt
- 14 tsp pepper
- 14 tsp garlic
- 14 tsp basil
- 14 tsp oregano
- 2 eggs well beaten
- 8 oz shredded Mozzarella cheese
- 1 prepared pie shell
Directions
- Heat oven to 375
- Cook onion and zucchini in butter
- Add seasonings
- Blend eggs and cheese in large bowl
- Stir in vegetables
- Put teaspoon mustard in prepared pie shell
- Pour in ingredients
- Bake 20 minutes
