Jalapinto Rice Casserole

Ingredients
- 12 c chopped onion
- 1 Tbsp melted butter
- 1 lb lean ground beef
- 2 15 oz cans jalapeno pinto beans
- 2 c cooked rice
- 1 16 oz can tomatoes drained and chopped
- 1 c sharp Cheddar cheese shredded
Directions
- Saute onion in butter until tender
- Add ground beef and brown
- Stir in pinto beans rice and tomatoes
- Mix well
- Pour into a 2-quart casserole dish
- Sprinkle cheese over top
- Bake at 350 for 20 minutes or until cheese is melted
- Serves 6 to 8
