Jamaican Steak

Ingredients

  • 13 c lime juice fresh is best about 3 limes
  • 1 tsp grated lime peel
  • 14 c salad oil
  • 14 c honey
  • 2 Tbsp prepared mustard
  • 2 cloves garlic
  • 12 tsp salt
  • 12 tsp pepper
  • 2 lb top round sirloin or flank steak
  • lime wedges for garnish

Directions

  1. In a small bowl whisk together all ingredients except steak and lime wedges
  2. Score steak across top or pierce top of steak with a fork
  3. Place in a shallow glass baking dish and pour lime juice mixture over the steak turn to coat both sides Refrigerate 6 to 8 hours to marry the flavors turning occasionally
  4. Remove steak from marinade and grill 5 or 6 minutes on each side or to desired doneness
  5. Slice thinly on the diagonal serve with lime wedges
  6. Makes 6 servings
